Mango Chia Overnight Oats

🥗 Ingredients

  • 1 cup rolled oats
  • 1.5 cups almond milk
  • 2 tbsp chia seeds
  • 1 large ripe mango, diced
  • 2 tbsp honey
  • 1/2 cup Greek yogurt
  • 1/2 tsp vanilla extract
  • pinch of cinnamon
  • fresh mint leaves for garnish

👨‍🍳 Method

  1. In a large bowl, mix rolled oats, almond milk, chia seeds, honey, vanilla extract and cinnamon together.
  2. Cover and refrigerate overnight or for at least 4 hours until the oats are soft and the mixture has thickened.
  3. In the morning, stir well and divide into two serving jars or bowls.
  4. Top each with a generous spoonful of Greek yogurt and the diced fresh mango.
  5. Garnish with fresh mint leaves and an extra drizzle of honey. Serve chilled.
