🥗 Ingredients
- 1 cup rolled oats
- 1.5 cups almond milk
- 2 tbsp chia seeds
- 1 large ripe mango, diced
- 2 tbsp honey
- 1/2 cup Greek yogurt
- 1/2 tsp vanilla extract
- pinch of cinnamon
- fresh mint leaves for garnish
👨🍳 Method
- In a large bowl, mix rolled oats, almond milk, chia seeds, honey, vanilla extract and cinnamon together.
- Cover and refrigerate overnight or for at least 4 hours until the oats are soft and the mixture has thickened.
- In the morning, stir well and divide into two serving jars or bowls.
- Top each with a generous spoonful of Greek yogurt and the diced fresh mango.
- Garnish with fresh mint leaves and an extra drizzle of honey. Serve chilled.
